A bit complex. Astragalus Roots are simmered in homemade soups and bone broth recipes for its nutrient dense mineral content. When consumed raw astragalus root is mildly bitter with a hint of delicate floral sweetness, but don't get too comfortable just yet, most report the next taste profile that comes after the slight floral taste is a "soap-like-taste", this may be due to its saponin content.
